Fruity chocolate with slight notes of cardamom.

VARIETY

Criollo and Trinitario varieties with central fermentation. Soft and sweet profile, with medium acidity, offering toasted hazelnut, caramel, melon, yellow fruit and citrus notes of grapefruit.

STORY

Finca Pasa Crocodillo is a corridor of cocoa forest between the Laguna Lachuá National Park and a neighbouring forest area. It used to be a pasture and after four years a natural carbon reserve is created. Wild animals, such as jaguars, have since reappeared. The farm employs local people and allows them to have access to the social security.
